Thanksgiving Stuffing ASAP!

Ingredients

8 cups breadcrumbs
1/2 cup minced onion
1 cup minced celery
1/3 cup melted butter
1 cup chicken broth
2 teaspoons salt
1/2 teaspoon poultry seasoning
1 dash pepper

Instructions
1 Mix all ingredients.
2 Microwave 3-5 mins on high.
3 Serve immediately.

Salmon Meal in 5 !


I found this recipe from the Food Network and thought it was super easy and delicious for a family meal. Let me know what you think.

Ingredients
2 tablespoons canola oil
1 pound fresh salmon fillet, skinless, cut into 2 pieces (not too thick or cooking time will increase)
Blackening Spice, recipe follows
1 (12-ounce) can "soy" black beans, drained (available at health food and specialty stores)
4 cups fresh spinach, cleaned
2 tablespoons unsalted butter
Sour cream, for garnish

Instructions
Heat oil in a large heavy saute pan or iron skillet over high heat until almost smoking hot. Coat the salmon fillets well on both sides with the blackening spice and place gently in the hot pan. Sear on the first side for about 2 minutes and then flip fish over. Add the black beans to 1 corner of the pan and throw in the fresh spinach and butter right on top of everything and cook it all for about 2 minutes more. To serve, take the spinach off the top and place it on the bottom of a plate. Then arrange the salmon and black beans around it. Garnish with a dollop of sour cream, if desired.

Blackening Spice
5 tablespoons kosher salt
5 tablespoons paprika
1 tablespoon dry thyme
1 tablespoon ground black pepper
1 tablespoon garlic powder
1/2 teaspoon cayenne pepper
1/2 teaspoon ground white pepper
Mix all the blackening spice ingredients well and store in a sealed container or spice canister. Keep extra as a versatile spice in your kitchen.

Hearty Breakfast Dinner for Champions!

ok, If this one doesn't become your family's #1 breakfast I don't know what will!








Ingredients:

1 package pre-cut cooked potatos (wedged)
8 eggs or 1 pint eggbeaters
8 cooked sausage links, hotdogs, or ham chopped up
1 package frozen fajita veggies without meat (bellpeppers, onions..etc.)
fresh strawberries & mangoes & kiwi (precut at the store) (optional)
3 tbsp oil

Instructions:

1) open packages for the potatos & fajita mix & place in large bowl & put in microwave for 3 min
2) heat a pan on high and add the oil. Add the meat and stir for 1 min. remove & set aside.
3) in same pan add the potato & fajita mix and roughly mix until starts to get fried (barely) about a minute.
4) in another pan scramble the eggs or mix the eggbeater and once it's cooked add the meat.
5) mix the egg mixture with the potato mixture and serve in a large serving dish with fruit.
viola! Yummy breakfast is served!

Pumpkin Pudding Pie Fix :) mmm










Ingredients:
1 ready-made graham cracker crust
1 can pumpkin pie filling
1 box vanilla instant pudding
1 container of Cool Whip
1/2 teaspoon pumpkin pie spice (to taste)

Instructions:

Make the pudding according to the direction on the box.
Mix the pudding, pie filling, Cool Whip, and pumpkin pie spice together in a large bowl.Spoon the mixture into the pie crust.BAM! You've got some yummy Pumpkin Pie :)

White Chocolate Almond Bark Brittle











Ingredients:
1 package white chocolate chips
1/2 cup toasted almonds
Cookie sheet covered with wax paper

Instructions:
1) Pour the white chocolate chips in a microwave safe bowl and put into microwave for 2 minutes 2) After 2 minutes stir the chocolate chips. If a lot of the chps are still not melted put in microwave for another minute.
3) Remove from microwave and mix in the almonds
4) with a large spoon empty entire contents of the melted chips & almonds onto the cookie sheet. 5) Put in freezer or fridge and when hardend, remove from fridge & break up the pieces.
And there you go!

Eggplant & Zucchini Pasta with Alfredo Sauce MMMmmm











Ingredients:
2 Packages of Trader Joe's Pasta Italiano
1 cup Ragu Alfredo Sauce
1 tbsp dry basil

Instructions:
Warm up a large pan on high heat and empty contents of the Pasta from the packages. Stir for a good 3 minutes. Pour in the alfredo sauce, stir until coated and for the next 2 minutes. Turn of heat and Serve. Top with dry basil. Yummy! This blend works great together. The package doesn't ask for the alfredo sauce, but since I've tried it, it just works amazing together. Serves 4.

Burritoes in a Snap!











Ingredients:
4 Tortillas
Tortillia Chips
Guacamole
Salsa
Frozen Burger Patties (Thawed)
2 cans Refried Beans
Taco Sauce
Sour Cream
1 large can of sliced black olives
1 package shredded cheddar cheese
1 tbsp Olive oil

Instructions:
In a blender, chop up burger patties and blend until in little pieces. Heat a frying pan on high with 1 tbsp olive oil and put chopped beef into it. Add the refried beans, and mix until well blended and heated (2 minutes). Add black olives. Mix. Put the Tortilla bread on a plate and seperate each one with a paper towel and place in microwave for 1 minute. Remove and for each one put a few spoons of the bean/beef. Top with taco sauce and cheddar cheese. Close the burrito and top with sour cream. Garnish with Guacamole, salsa & chips.
Serves 4.

Creamy Mushroom Fettuccine












Ingredients:
4 packages Trader Joe's Fettuccine with Mushrooms
2 tbsp Dried Basil
1/2 cup milk

Instructions
:
Turn on the heat on high and pour contents of packages into a large skillet. Cover with lid for 3 minutes, stirring occasionally. Add the milk. Stir for another 2 minutes. Remove from heat. Sprinkle with dried basil. (Serves 4 )

3 Bean Salad

Ingredients:
2 cans black beans
2 cans pinto beans
2 cans lentil beans
4 cans chicken (just like the canned tuna)
1 sprig basil washed & dried
1 package squash (can be yellow, butternut, zucchini)
French Dressing
1 med pot of boiling water turned off the heat.
2 tsps Dried parsley
Instructions:
Open the packaged squash and place in pot of boiling water for 3 minutes. Open the rest of the canned ingredients and mix in a large bowl. Mix in dried parsley. Pour French dressing on top. Add basil for garnish. Serves 4.

Mexican Fajitas in 5 Minutes!

Ingredients:
Frozen bag of green and red bell peppers (thawed)
1 can of sliced pineapples drained
1 package of frozen fajitas steak strips precooked (thawed)
1 Fajitas seasoning packet
1/2 sliced onion
1 package of precooked shrimp (thawed)
2 tbsp olive oil
1 Package of your favorite Tortilla bread
SERVES 4
Instructions: Heat up a nonstick frying pan on high until smoking hot then add the olive oil & stir around the pan. Add the onion and stir for 1 minute. Next add the bell peppers, shrimp, seasoning and stir. Heat up for 3 minutes then add the pineapple last. Stir for an additional 2 minutes. Put Tortilla bread in the microwave for 30 seconds. Remove from heat. Serve.

Macaroni and Cheese in 5 min

Ingredients:
1 box kraft macaroni & cheese
2 slices of kraft cheese singles
1 tbsp butter

Ok, this is not the microwaved version or the instant mac n cheese. This is the Kraft macaroni and cheese that normally takes at least 20 minutes to cook. Here is the trick, if you have Alhambra or any other bottle service with a hot water, put the macaroni in a pot with the amount of hot water from the package on it. It cuts the boiling time down to a minute and the macaroni will be ready in 4 minutes. Then you can stir in the cheese. I add a couple slices of kraft singles and 1 tbsp butter to make it extra creamier. And if you want really puffy mac n cheese or don't have Alhambra just pre-soak the noodles for 15 minutes in very hot water before you start to cook.

5 Minute Chocolate Cake

Found this recipe online. Thought it was too good to be true. Then I tried it and mannnnn it was goooood. Original recipe said to use a mug. I think a bowl works better. Try it & let me know what you think!

Ingredients:
4 Tablespoons cake flour
4 Tablespoons sugar
2 Tablespoons cocoa
1 Egg
3 Tablespoons Milk
3 Tablespoons oil
1 Bowl

Instructions: Mix flour, sugar & cocoa. Spoon in 1 egg. Pour in milk & oil and mix well. Put in microwave for 3 minutes on high and wait until it stops rising and sets in the bowl. Remove from bowl and shape however you like. Top with frosting. Bam, you've got chocolate cake!

Herb Basil Angel Hair Pasta with Shrimp

Ingredients:
1 package precooked shrimp
1 package of Angel Hair Pasta
1 stick melted unsalted butter
1 tbsp dried basil
1 tsp jarred pre-minced garlic
salt
Instructions:
Put precooked shrimp in a microwave safe dish and cook on high for 5 minutes. Bring a pot of salted water to a boil over high heat. Add pasta and boil, stirring occasionally, until pasta is cooked all the way through, about 4 to 5 minutes. Drain pasta and mix with cooked shrimp. Pour butter and dried basil over the pasta. Mix. Serve. Serves 4.


Scrumptious Chicken Wraps

Ingredients:
4 Wheat tortillas
4 White tortillas
4 cans Trader Joe's Premium Chunk White Chicken
2 packages pre-cut lettuce
1 7oz can of sliced black olives
1 cup Mayonnaise
1 tsp Salt & Pepper
juice of 1/2 lemon
Dijon Mustard
Instructions:
1) Mix the canned chicken, lemon, mayonnaise, salt & pepper and olives. 2) Rub a little Dijon mustard on the tortilla bread, add some lettuce and a couple spoons of the chicken. 3) Wrap the tortilla by flapping in the top and the bottom a little bit then the two sides so it will look like a burrito. 4) Cut the tortilla in half at a diagonal. 5) Repeat steps 1-4 for the rest of the wraps. 6) On a large serving tray place the 1/2 wraps. Serves 4

Stir Fry Beef

This recipe is unbelievably fast, healthy and filling! You can eat it with Rice, Pita Bread, Plain or in a tortilla.
Ingredients:
1 Package Trader Joe's frozen Stir Fry Vegetables
1 Package Trader Joe's frozen Red, Yellow, Green Bell Peppers
12 oz Flank Steak cut into thin pieces.
Salt & Pepper as desired
2 tbsp Oil
Instructions:
1) Put the Vegetables in a large microwave safe bowl, cover with a paper towel and put them in the microwave for 3 minutes on High. 2) Rub the Steak with salt & pepper 3) Heat a wok or large frying pan on high heat until smoking hot. 4) Add the oil and swirl around the pan 5) Slowly add the steak. 6) Cook stirring frequently and light brown about 3 minutes. 7) Drain the juice of the vegetables from the microwave then add them to the meat stirring for a couple minutes. 8) In a large platter add the stir fry mix & serve hot. Serves 4.


Thai Beef with Rice

Ingredients:
1 Package Flank Steak Strips
1 Box Minute Rice
Handful Basil Leaves

2 tbsp Oyster Sauce
2 tbsp Oil
Red Pepper Flakes as desired


Instructions:

1) Follow instructions for Minute Rice. 2) Heat a wok or large frying pan on high heat until smoking hot. 3) Pour in the oil and swirl around the pan, then slowly add in the beef strips and chili flakes. 4) Cook, stirring all the time, until the meat is lightly browned, about 3 minutes, then pour over the oyster sauce. 5) Make sure the meat is heated through and the sauce coats the meat. Chicken Stir Fry

Ingredients:
1 Package chicken strips
1 Package of Fajita Spices (next to the gravy)
1 Package Trader Joe's frozen Yellow, Red & Green Bell Peppers
1 chopped onion
1 tbsp oil

Instructions:
Put the Chicken Strips in a microwave safe dish and place in microwave on high and cook for 4 minutes. Heat a large pan for 30 seconds then add the oil and the onion stirring for about a minute. Next, add the peppers stirring frequently. Once the chicken is done in the microwave add it to the pepper mixture stirring for another minute. Remove from heat and add to serving platter. Serves 4.
