Super Fast Super Yummy Creamy Crab Egg Rolls

Ingredients:
4 oz.- crab meat
1 - large egg
2 oz.-Cream Cheese
1/4 tsp.-Grated Lemon Zest
1/2 tsp.-Lemon Juice
1/4 tsp.-Kosher Salt-to taste
1/8 tsp.-Ground Black Pepper
3 tsp.-Chopped Chives
1 Package-Azumaya Square Wraps
Oil -for deep-frying

Instructions:
1. Egg Wash the Egg whisked with 2 Tablespoons of water.
2. Combine the crab, cream cheese, lemon zest and juice, salt, pepper, and chives together. Place a large tsp. of filing on one corner of a wrap. Moisten the edges with the egg wash. Bring one set of opposite corners together and seal all the edges, making a triangle. Next, bring the long ends of the triangle together, overlapping the corners slightly and sealing with more off the egg wash. Turn the third corner up if it isn't already forming a small tortellini or hat-shape. Heat the oil on high in a deep fryer or deep dish pan. Place the eggs rolls into the oil with a tong until they are golden brown, about 45 seconds to 1 minute. Drain on paper towels.
