Hearty & Comfy Black bean & Celery Soup

Ingredients:
1 tbsp olive oil
1 can black beans
1 can refriend beans
1 can diced tomatoes
1 cup chopped celery
1 large onion chopped
4 cups boiling water
2 cloves garlic
3 tbs cumin
1 tbs red pepper flakes
1/4 cup cilantro

Instructions:
1) Place chopped celery, onion & garlic in 2 cups of the boiling water and put into a microwave proof glass bowl. Cover the bowl with a microwave dish cover (can get from almost any store like Walmart or Target). Heat on high for 4 minutes.

2) At the same time, pour the rest of the boiling water, refried beans, canned diced tomatoes, spices and oil into a pot and heat on high bringing everything to a boil.

3) Once the veggies in the microwave are done, combine with the pot and stir. If you prefer the soup not to be so chunky, you can puree the contents with an immersion blender. Otherwise it is good as is. Sprinkle with the chopped cilantro. serve. Yummy & will fill you up and keep you so warm inside.
